Vacuum Coffee Maker – How to brew the perfect stovetop coffee


We at www.italianbeandelight.com sell the Yama Vacuum Coffee Maker, the perfect syphon coffee stovetop brewer with a capicity of 5 or 8 cups for the perfect gourmet drip coffee. Cheaper than other vacuum coffee makers like cona, hario or bodum santos, this yama vacuum brewer brews coffee with a great body, but without the sediment you would get in a French press. It has a longlasting cloth filter that fits over the metal filter assembly and should be replaced each year. The lid doubles as a stand for the funnel (top glass part), and it comes with a spare cloth filter and a burner wire grid for use on an electric stove. The glass is labelled on the bottom as “Heat-Resistant Yama Glass”. The brewer is easy to use. The rubber gasket between the top and the bottom -the flange on it makes the creation of an airtight seal (and the separation of top and bottom when the coffee is brewed) much easier. In the recipe for “cowboy coffee,” egg shells are used to clear the brew. How does that work?


The recipe calls for several egg shells per gallon of coffee. They are stirred in with the coffee and somehow make the solids settle out so the coffee is clearer. I don’t think it’s the stickiness of egg whites — I think it has to with charge of particles.
I did a bit more research. Beer and wine are clarified using “fining” agents, which include isinglass (almost pure collagen made from sturgeon swim bladders), gelatine, various synthetics. Among the agents mentioned are egg white and, occasionally, egg shells. See the “Clarifying” section of .

The amounts used to clarify are slight — on the order 1/2 gram per gallon — so the amount of egg white clinging to the shells may be enough.

While it is not clear whether the shell or the whites are important, the universal factor in all the discussions of fining agents is charge. Suspended solids are often charged and the fining agents attract them so they can settle. So as best I can determine, that seems to be the mechanism. (Assuming of course, that it even works — while very often cited, we would need to test the theory!)

I just bought a french press. I would like to know which are some good organic coffee brands that I could brew myself. Something I can also buy online. I usually shop for coffee at trader joe’s or wholefoods. I am currently brewing weaver’s coffee.

Can I use a stovetop espresso maker to brew regular coffee?


I have a stovetop espresso maker, but I want to use it to brew one to two cups of coffee with my “regular” coffee beans. I don’t want to use my big electric coffee maker to make a cup of coffee.
